Hey guys!

So I’m back to give you some clean-eating recipes, that are desserts and taste amazing! Imagine being able to eat clean, and have a dessert everyday.

Sign me up!

 

People usually find the food the hardest thing to stay on track with, when it comes to sustaining a healthy lifestyle. It’s usually I eat this, and that, and now it’s over, I’ll start next year.   But what if you can eat this, and that, a burger here and there, but still remain on track? Yes you can!

By creating clean versions of your favourite foods, that taste as good as their originals!   I’ve compiled a few of my favourite food bloggers, and I have tried many of their recipes, so you don’t have to do the testing yourself!

These are really the best clean-eating recipes out there! And I know you want fast, and easy recipes that take you 10 to 20 minutes to make tops?

These recipes are all from my ultimate favourite clean eating food blogger Chocolate Covered Katie. Her quick 5 minute microwave desserts have really been a life-saver! Most of her desserts are vegan, dairy-free, sugar-free, soy-free and gluten-free!

Here are a few of my favourite ones you have to try! My sister tried them and didn’t even realise they were healthy!


SINGLE-SERVING MOCHA CHOCOLATE CAKE

This one is so rich, moist and chocolatey I couldn’t even believe this was healthy. I’d have this cake anytime, anyday, anywhere…

Ingredients

  • 1 tablespoon plus 2 tsp cocoa powder
  • 3 tbsp spelt, white, or Arrowhead Mills gf flour
  • 1/2 tsp instant coffee granules, decaf if desired
  • 1/8 tsp salt
  • 2 tsp granulated sugar or xylitol
  • 1/4 tsp baking powder
  • pinch uncut stevia OR 1 additional tbsp sugar
  • 1 tbsp coconut or veg oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. I can’t personally vouch for the results if you make that substitution.)
  • 3 tbsp milk of choice
  • 1/4 tsp pure vanilla extract

Directions

Combine dry ingredients and mix well, then combine wet ingredients. Microwave for 45-50 seconds depending on how strong your microwave is. If baking, bake at 350F for 14 minutes.



HEALTHY APPLE CRUMBLE RECIPE

This one tastes JUST like your mum’s homemade apple crumble, minus all the butter and sugar!

Secretly healthy apple crumble, with a rich and buttery crumble that literally melts in your mouth.

Ingredients

  • 1 medium-sized apple, diced small
  • 1/8 tsp salt
  • 2 tbsp milk of choice
  • 1/2 tsp apple pie spice (you can probably sub cinnamon)
  • 1 stevia packet or 1-2 tbsp sugar or sucanat
  • optional add-ins: walnuts, raisins, etc.
  • 3 tbsp quick oats (15g) (For substitution notes, see nutrition link below.)
  • 2 tsp oat flour (or another flour of choice) (4g)
  • 1 tbsp oil or butter-type spread (such as Smart Balance Light or Earth Balance) (15g) (For a fat-free substitution, see “nutrition facts” link below.)

Directions

Mix all ingredients well and bake at 350F for 40 mins. Turn broiler on high for 2-3 minutes to make the top layer crusty. Turn of the heat and let it sit in the oven for 15 minutes. Or, you can microwave it on high (like I did cause I was rushing!) for about 1-2 mins until it’s firm.



1 MIN COFFEE CAKE IN A MUG

This cake goes amazingly well with coffee! I have never tasted a coffee cake this good, and it is healthy. This goes out to all the coffee lovers who love cake with their coffee!

Ingredients

  • 3 tbsp spelt or white flour (For gf: a commenter had success with 1 tbsp rice flour and 2 tbsp almond flour)
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • pinch uncut stevia OR 1 tbsp sugar
  • 1 tbsp plus 2 tsp water
  • 2 tsp oil or melted margarine or applesauce (I prefer the oil/margarine, but that’s simply because I’m not a fan of fat-free baked goods)
  • 1/4 tsp pure vanilla extract
  • For the streusel: (If you like a lot of streusel, feel free to double all ingredients below)
  • 1/8 tsp cinnamon
  • 1 and 1/4 tsp sucanat or brown sugar
  • 1/4 to 1/2 tsp oil or melted margarine (once again, use applesauce if a fat-free version is desired)
  • tiny, tiny pinch salt
  • 2 pecan halves (or walnut halves)

Directions

Preheat oven to 330F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave.



HEALTHY CHOCOLATE CAKE-BATTER MILKSHAKE

I’m finishing this off with one of her amazing milkshake recipes. It tastes just like peanut butter cookie dough. I’m so amazed by the taste! It’s smooth, creamy and tastes like Ben N Jerry’s without the sugar and unhealthy fats!

Ingredients

  • 1 frozen large banana, as ripe as possible
  • 1-3 tbsp peanut butter (or another nut butter or sun butter)
  • 2/3 cup milk of choice (For a rich, “ice cream”-like shake, try using full-fat canned coconut milk. Use more or less milk, depending on desired thickness.)
  • pb cookie dough of choice (you can try her recipe! Healthy PB Cookie Dough recipe )
  • Optional: vanilla extract, a pinch of sea salt, chocolate syrup or cocoa powder

Directions   Blend everything together until smooth.

Hope you guys have fun trying out and experimenting with these recipes! Remember, having a healthy lifestyle is not about restriction. Who wants to be eating carrot sticks all day? :/  BORING! It’s about eating in moderation and finding healthier alternatives to our everyday foods. We can still eat cake, burgers and pizza, but just healthier versions of them! Healthy eating CAN be fun!
